Jamaican Jerk
Our group meeting at school was surprisingly productive… We have our big capstone presentation on Thursday, so it as good to get things squared away today… When we got back from school, Bill and I went for a nice walk around his neighorhood ~ I still can’t get over the delightful weather, I’m obsessed with talking about it haha…
Dinner tonight was definitely appropriate given the weather outside! We made jamaican jerk chicken (using sauce we brought back from Jamaica last summer), grilled plantains (sauteed in olive oil & juice from two clementines with a sprinkling of brown sugar on top), and a very colorful salad (romaine lettuce with tomatoes and cucumbers)… It was DELICIOUS and we ate watching the Phillies game with all the windows open and the sun pouring in… We also each had a Miller Lite (in a very frosty Eagles mug) to “complement” dinner
Granted it wasn’t a Red Stripe, but our dinner did bring back some Jamaican memories…
Now we are going to finish watching the Phillies game & enjoy this relaxing Saturday night!






Have fun watching the Phillies! I am all baseball-ed out today, after watching the Sox and Yankees… so I’m turning my attention to hockey tonight!
They do! They taste just like regular oranges… but maybe even sweeter. You just have to not think about the kinda-morbid name while you eat them!

Mmm, I LOVE Jerk seasoning – gives dishes a much-needed “flavor-kick,” for sure.

I always want to buy plantains…are they easy to cook? They scare me a little.
arielle ~ believe it or not i just winged it based on a few food network recipes… i just sauteed them in olive oil, a little bit of orange juice and a sprinkling of dark brown sugar on both sides and ta-da done! i also saw a recipe where you coat them in olive oil and grill them on a foreman… i might try that next… i never had them before and expected them to be sweet but was surprised when they tasted like potatoes!
