Breakfast Bulgur

April 29, 2008

Ahhh it’s Tuesday… yesterday flew by, so I’m hoping today will be quite speedy as well… although I have my doubts simply because my day won’t be as jam-packed :(

It looks like another iffy day weather wise here, it was raining on our way to work, but they say it will clear and warm up a bit (we were in the 40′s so now we are approaching 50′s – better but not as good as 70′s!)… Ugh, I can’t wait for summer!

I tried something new for breakfast today… breakfast bulgur… I used Hodson Mill’s bulgur with soy… I couldn’t find directions for microwaving it, so I decided to wing it… I used 1/4 cup bulgur with 1/2 cup milk and a small handful of blueberries… I microwaved it for about 4 mins (I have an intense microwave, though) until it appeared it was going to overflow… Then I added some flax and 1 tsp of crunchy peanut butter… Romina made me crave the blueberry/pb combo! I usually let the pb sit on the side and take little bits of it with each spoonful, but I decided to mix it in and it was delish! It was a great substitue for the crunch that nuts provide… I really enjoyed bulgur, it was nutty, chewy, and totally fiber/protein packed… Don’t get me wrong, I’m still hooked on oats, but it was a nice (but still warm & cereal-free) change for breakfast, since I’m trying to expand my horizons hehe…

How do you cook breakfast bulgur? Do you microwave it or should it always be cooked on a stove top? Any tips are greatly appreciated ~ I’m wondering if it tastes different microwaving vs. stove…

Ok, well I’m off to start the day, happy Tuesday!

I cook my bulgar in the microwave for about 5-6 minutes. Today, I tried mixing bulgar with oat bran– it’s a yummy mix! It’s much more filling and it took less time to cook in the microwave.

    HAPPY TUESDAY! :)

That sounds delicious! And I try having bulgar with dark chocolate and nuts when I’m feeling like something sweet :D And I generally microwave–too lazy to wash the pot!

I’ve never had breakfast bulgur. I’ve always wanted to! I should try it, there’s nothing like something new in the morning. =) Glad you liked the PB mixed in! It makes a nice addition. =)

I have no idea how to cook it. What is bulgar anyway? I want to try it but it looks like it may be high in wheat, which is what kills me. Haha. It prob is completely different though. haha

I haven’t thought to try PB and blueberries in my oatmeal/cereal grains, even though I love PB and blueberry jelly. I’ll have to try that. Thanks!
Love your blog, by the way!

Tina ~ I definitely have to try that combination soon! Thanks for the microwave tip!

oatmeal ~ Ahh, great idea w/ the nuts & chocolate… perfect dessert!

Romina ~ definitely try it… i was pleasantly surprised!

Cara ~ Yes, it is definitely a wheat product :/

Melissa ~ I’d definitely recommend it as a nice change from oats once in a while!

vegetariansuburbanite ~ I never thought to have pb/blueberries either… I add them separately, but never together, until I saw Romina’s blog post from yesterday! Delish! Thanks!!

Sagan ~ Thanks! I’m trying to be more experimental!

I actually use that same bulghur as a substitute for brown rice in my dinners. It cooks a lot faster than brown rice, and it has more protein. Even though it says “hot cereal” on the box, it doesn’t really have a sweet flavor, so it works perfectly!

Tina ~ No prob! Good luck :)

    Caroline ~ That’s a great idea – yum!
