Return of the Veggies

My timing with meals today worked out really well… I didn’t have lunch until 1pm, which meant that around 4pm, I started getting hungry… I was planning on working out first today before dinner, as oppossed to the opposite, so having a mini Clif bar at 4pm was the perfect fuel to get me through a workout!

At the gym, I had a condensed, but still equally challenging workout… I did 20 minutes of elliptical (tried to go hard & fast) and 20 minutes of upper body weights… I’m trying to ensure that I hit every major body group when I lift, so today I did chest, back, shoulders, and biceps… I saved the triceps and abs for after dinner, simply because I was short on time and these are easy to do at home!

Dinner was the yummy citrus brown rice with chicken combination that I had last week… just to refresh your memory, this is brown rice simmered with broth & orange juice… carrots, broccoli and cooked shredded chicken breast are added and mixed in at the end… it is so flavorful & fresh all at the same time! Makes my tastebuds dance ;) I also had roasted green beans… Oh, how I missed my veggies the last few days!

Now I am off to do some minor work for my online work course and relax for a bit… For all you Jon+Kate+8 fans, it’s on tonight!

I couldn’t resist, it’d been a while since I had ice cream, so I had a tiny serving with half of a microwaved Z bar… I agree with you all that it definitely tasted like a sundae… DELISH!!!

    Mmm the brown rice sounds delicious– I love citrus flavoring.

    And I saw the mini clifs at Target yesterday– they’re so cute and tiny!

    Funny! I had a ‘condensed’ gym work out, brown rice and chicken also! Though I had asparagus, hehe!
