New Fave

One of the benefits of having this blog is that I am constantly self-encouraged to try new meals and snacks in an effort not to bore you all :)   So last night when I was deciding what to pack for lunch, I was trying to think outside the box, despite not having been food shopping in a while… I knew I didn’t want pb&j again (although I could and have eaten it for weeks and weeks straight), but didn’t know what to have… My eyes wandered to the Hodgson’s Mills breakfast bulgur and an idea was developed!

I cooked 1/4 cup bulgur in the microwave… let it cool and then added a package of albacore white tuna (one of the single serving, already drained, packages)… I heavily doused it in buffalo sauce and sprinkled it with a tsp of grated parmesan cheese… I let it sit in the fridge overnight and obviously today before I ate it… I loved it cold, but I’m willing to bet it would be good warm, also…

I LOOOOOOOOOOOOVED this delicious combination… plus it is a well rounded meal too, except for the fact that it is lacking veggies (although I wish hot sauce could be counted as a vegetable)… this would be good with some red or green diced pepper, or even as a side dish (without the tuna & tons of veggies)… I’ll definitely be adding that in next time & playing w/ potential bulgur combinations… I think I might just have developed a second obsession to bulgur… along with my lunch, I had two Clementine’s, which are featured in my “snacks” for the day picture… I had the banana mid-am… I plan on having the blueberry yogurt/half chocolate brownie z bar as my mid afternoon snack ~ I’m really excited to try that combo, sounds gross but I think it will be yummy if you like chocolate+blueberries together…

Ok well back to work, by the way thanks for all the comments on our lesson today – it went really well and the kids were so pumped and excited about it!

    Isn’t it great when you suddenly feel a “creative streak,” and are able to enjoy new dishes?? I think so :0) Your new favorite sounds great!!

    That sounds like a great combination! Isn’t it funny when we start doing things for blogging? If something happens in my life, I don’t hesitate to exclaim: “I’m going to blog about that!!”

    Wow, that IS a really interesting combination! I love mixing random foods, I might just have to give that one a try. It actually sounds like it’d be really really good!
