Fresh & Light

As a snack this morning, I had a slice of banana baked oatmeal, which I was able to warm up in our work microwave… The only thing it was missing was a smear of peanut butter, but I survived!  This was a nice change from my normal snacks of yogurt, bars, fruit, cereal…

For lunch today I had some fresh strawberries, cottage cheese (I mixed in a mini box of organic raisins into this), and cinnamon raisin peanut butter on a wheat english muffin…

Some points to note:

  • I really loved the cottage cheese/raisin combination… I dont think it would fill me as a snack, but it was a nice sweet addition to my lunch!
  • Wavering from my normal “Crazy Richard’s Natural Chunky PB” was also different for me, but I hear how everyone raves about Peanut Butter & Co Peanut Butter, so I thought I’d try something new for a change… I was really loving this peanut butter because it was slightly sweet but still peanut buttery… Plus it is 160 cals for 2 tbsp, slightly lower than my normal pb… I think this would be lovely on cinnamon raisin bread or maybe even in (gasp) oatmeal!
  • How I missed strawberries???!!!!  These tasted so fresh & sweet, almost like I had put sugar on them, but I didn’t… I think strawberries are the one fruit that I can eat plain without having to pair them with something else… they dont have the same “I-am-hungry-after-I-eat-it” feeling that bananas & apples have on me…

I’m trying to keep my eating today clean, healthy, and light-but-filling… these foods definitely fit the bill… I felt like I overdid it a bit with this weekend’s eating and I am feeling pretty run-down as a result!

On a side note, I can’t wait to get to the gym tonight (and out of work because today is dragging!) and get myself energized again!

    I am right there with you on the need for clean-eating and exercise after this past weekend. Now that I think about it, I feel gross after every holiday. We need to eliminate some holidays.

    Ahh, you just reminded me that I want to try making some banana baked oatmeal – thanks for the reminder!! I think I’ll go do that now actually, since I don’t have any homework anymore – ahh, freedom.

    Yes, Peanut Butter & Co. is a fabulous brand of p.b., for sure – I love the “Crunch Time” variety :0)

    I too have missed strawberries, among all of the other delectable fruits that are FINALLY in season – whoo hoo! :0)

    I used to top my cottage cheese with raisins ALL the time. I love the flavor combination, but I had completely forgotten about it. Thanks for the reminder!
    Also, I just picked up the same variety of PB and Co. (It was one of the jars I picked up at Target the other day). I have already tried it on some crackers, but I can’t wait to try it in a more creative way…

    i bought that pb this weekend too!!! after hearing all the raves i had to try it. I also bought the dark chcoclate one and like the cinnamon raisin one TONS better-although i’m really surprised about that one. i love the chunks of raisin. yum!!!

    Raisins in cottage cheese? Wow, I love that idea! Never even thought of it, but I will definitely be trying it now!

    I recently bought the white chocolate pb from PB and Co and it is quite tasty but they also had the cinnamon raisin kind (those were the only two that were at my grocery store) so I think I might be picking that one up next!

    Ashley ~ I know, if we could remove the food from holidays and family parties, I’d definitely be able to eat healthy more often… It’s just so tough to stay on track w/ temptation around us!

    MizFit ~ I know exactly what you mean… Going to the gym gives me such an energy boost :)

    Caroline ~ yeah i was pretty impressed w/ the raisins/cottage cheese combo, I didn’t want it to end, I loved the sweetness of it… I can’t wait to have it in more creative ways as well… it looks like pb&co has a recipe book too, I was almost tempted to buy it!

    Betsy ~ hehe, great minds think alike… I have to try the chocolate ones next!

    Kristie ~ I had them in my purse so I thought hmmm why not ;) It turned out to be a good combination… I want to try the white chocolate pb next! I thought I’d play it safe w/ cinnamon raisin first, then branch out hehe…
