Milestone

May 13, 2008

Today was a mini milestone for me… We had a lunch meeting today where pizza was going to be provided; however, instead I planned ahead and packed a colorful, fresh salad to bring with me and eat instead… I have never done this before, nor do people ever do this… People seem to jump at the opportunity to have free food, so I definitely did get a few weird looks & comments…

Onto the packed lunch… I picked up bok choy at our produce market the other day and I’ve been dying to try it in a tofu dish; however, I was scanning recipes last night and read that it was delicious in salads, so I thought hmm, good idea!  I chopped up a head of baby bok choy, added a honey tangerine, a tbsp of sunflower seeds, handful of chopped baby carrots, some grape tomatoes, and a tbsp of a wasabi oriental snack mix (for some extra crunch & kick!)… I added a tbsp of balsamic vinagrette dressing, simply because I wasn’t sure what kind of dressing would go best and this kind is always a safe bet; however, I wasn’t a huge fan of the dressing being on the oranges, but it was edible!  This was an interesting, but delicious mix of ingredients for a salad… I think I covered a lot of food groups by my mix-ins seeing as how I got veggies, fruit, nuts, oils, and grains in there… I’m curious if this will hold me over for the next few hours… hopefully so!

This morning, I had a snack of non-fat cottage cheese with some fresh strawberries… I guess I don’t have to tell you how much I like this combination, since I raved about strawberries yesterday ;)

    I love bok choy! I’ve never actually bought it for myself though — your salad is motivating me to do that! :)

    Wow! That is huge. I always pack a healthy meal so I don’t have to have the pizza, junk, etc.- but instead I eat both! Good for you!

    What a creative salad! I am a fan of salads that have 1) a lot of color and 2) a variety of textures, so that sounds like a salad I should try! So visually appealing, too!

    Good for you for resisting the pizza by bringing your own HEALTHY food, even with all the stares!

    Caroline ~ Yeah me too, although I always forget to try new ‘experiments’… I love adding fruits to my salad, especially citrus fruits…

    Kristie ~ Yeah it’s funny I actually didn’t mind the stares after a while, I kept thinking of how proud I was of myself LOL…
