So Sad

So sad, I’m back from my last time with the first graders… It was SO sad leaving them, I can’t wait until next year when the program starts back up again… They really enjoyed the pizza party and it gave us an opportunity to meet their parents who couldn’t stop talking about how us being there was such a positive impact on their children… They said that their kids have a newfound interest in science, technology, and the defense industry… As we were leaving a bunch of the little girls got up and gave me a huge hug, I almost fell over… It was SO sweet of them :) It was such a rewarding experience and I’m so glad I had the opportunity to participate :)

Before I headed to the school, around 11am my tummy started grumbling so I had the scone that is featured in my “snacks” picture below… I’m planning on having the raisins & mini clif bar this afternoon before I head to spinning… If necessary, I packed cottage cheese but I think I might save this for dinner and try to be creative with it, we’ll see what my tummy tells me!

I didn’t get to eat lunch until around 1pm, so it’s a good thing I ate that scone, it held my hunger unbelievably well! I used a leftover whole wheat tortilla from last night’s tacos as well as the leftover chopped cherry tomatoes, a few stray olives, and romaine lettuce… I combined all this with a chopped up soy veggie patty and sprinkled on some hot sauce… I couldn’t even close it because the tomatoes & lettuce was overflowing, so instead i just ate it like a makeshift taco salad!  I wish I could show you the picture of my finished product, but unfortunately, the no camera at work rule gets in the way! This was a really yummy lunch, I only wish I had some avocado to go along with it, then it would be absolutely perfect…

    Yum! no camera at work rule is an interesting one for sure! If you really feel the need to share the favors- feel free to email a pic to me!!! I could use any inspiration or tips you have to offer!!!!! :)

    Please dismiss this question if you’ve already fielded it and can direct me to its answer elsewhere, but I was wondering if there is a specific number or range of numbers calorically that you aim for each day?

    Aww, sorry that your last meeting was bittersweet; but as you said, the program will start up again next year! :0)

    Ahh, the avocado would have been PERFECT with your lunch – but it still looks good anyways :0)

    Lily ~ Hi Lily… I’m trying not to count calories now, I started this a few months ago, right around the time of the blog… Previously, however, I did aim for 1250 calories + the calories burned during workouts (even if it was just a walk)… I have a Polar F4 HRM, so that is how I was able to determine calories burned… So, for example, if I did spinning on a particular day, I’d add 400+ calories to the 1350 calories for the day, resulting in 1750 (if you google the harris-benedict formula, it’s a great calculator of calorie needs, which is how I derived the 1350 number)… Prior to this technique, I was on Weight Watchers and used the flex points system… Right now I feel like I am in a much better place and have a much better relationship with food and appreciation for my body, it hasn’t always been easy… I still struggle and still get cravings and eat junk, but i’m just trying to listen to my body, eat good food (lean protein, whole grains, fruits/veggies), and stay active… hope this helps!

    VeggieGirl ~ Yup, although it will be with different kiddies ;) Hehe, I know, I need to think ahead next time and keep some avocados on hand!

    Glad things went well with the kids! It’s good to hear that the program sparked their interest in the sciences :D

    And the taco salad looks good! Although I do agree an avocado would have made it even better!
