This recipe is credited to my mom who suggested that I make baked oatmeal in mini muffin tins so that they will be even easier to grab and eat on the go… My mom and dad have become addicted to these, so I think this will be a weekly recipe that I will have to bake! However I am going to alternate my choice of fruit… instead of apple + raisins, you could use bananas, pumpkin, etc…
- 2 Cups of Oats
- 2 Tsp Light Brown Sugar
- 1 egg
- 3 Tsp Vanilla Extract
- Half a chopped/diced apple
- 50 Raisins
- 1 Cup Skim Milk
- 1 Tsp Baking Powder
- 2 Tbsp Cinnamon
It’s a very simple recipe… Just mix the dry ingredients (all except for brown sugar) separately then mix the wet ingredients separately… Combine both together and mix until well combined! Pour into muffin tins and bake until semi-golden on top (I let mine “golden” aka brown a little too long!) @ 350 degrees (approximately 12-15 minutes). When almost done, sprinkle the brown sugar on top and put on broil for a few minutes to let the brown sugar caramelize a bit… This recipe makes 12 Mini Muffins, which I estimated at 77 calories each…
This is a healthy, yet yummy, light, moist muffin!

WOWowowowowowow! Looks like a simple and super low cal recipe! I can’t WAIT to try this out. I think I will tonight. Or I MIGHT wait until Monday and pack them in my bag for South beach next week! I bet they will make a great snack on the plane, beach, before going out etc! ohhh I can’t wait! Thanks for sharing!

oh question! what kinds of oats did you use? instant? old fashioned? steel cut (doesn’t look like steel cut from the pic)

Thanks for sharing this recipe . I made them with fresh Strawberries instead of the apple and raisins tonight and they turned out quite yummy.

…What do you preheat your oven to? I have all the ingredients ready to go but im afraid i might burn them XD im gonna try 350 and then bake them for about 15 minutes and see if that works. but it smells really good! I cant wait to eat these.

Kelly ~ Hi! Ooops, I can’t believe i forgot the temp/time on this recipe! I baked them for 350 degrees for about 12 mins I believe (until I put a cake tester in and it came out clean), the time probably depends on your oven though… may be more or less… good luck!
