Tofu = Melt In Your Mouth

The most amazing thing happened to me mid morning… I got sore… I haven’t been sore in quite some time, but feeling it today made me so happy!  I think it’s because I switched up my routine last night and really used a lot of muscles in my arms/back that I don’t typically use by going to kickboxing last night!  I have been proudly stretching my upper body all morning at my desk :)

Instead of eating every 3-4 hours on a hard-set routine, I have decided that I will only eat when I’m hungry… Typically, I will see that it’s 9am, 12pm, 3pm, whatever and think OK TIME TO EAT!  I think I’m really going to try to listen to my body (one of my only rules about food) and eat when I’m hungry, stop when I’m full… I’m going to stop depending on the time and instead depend on my stomach, that’s what it’s there for, isn’t it (well, among other things!)??

That being said, I had two clementines & an oatmeal apple raisin muffin (recipe to be posted tonight) mid morning because I was hungry… I really think my increased hunger was due to the decreased oatmeal portion this morning… I think I’ll be returning back to the 1/2 cup serving next time!

Anyway, I was super excited for my lunch today since it was my first time having grilled tofu, let alone tofu on a sandwich!  The base for this delicious sandwich was a whole wheat Thomas’ english muffin… Then I piled my grilled Siracha tofu on top of a bed of bok choy leaves… I did eat this sandwich closed; however, it looked too pretty on the inside to photograph it all closed!  I loved this sandwich, especially the texture… it totally reminded me of cold mozzarella (with a kick!) sandwiches, which is one of my favorite things… I LOOOOOOOOOOOVED it!  On the side, I had the other half of my sweet potato from last night… I sure am glad that I only ate half of it tonight, since I got to enjoy it again today!

I was a little hungry after this so I snacked on a handful (approximately 15 or so) of Blue Diamond whole natural almonds (i have an emergency jar at my desk at work)!

    I’m really into kickboxing, so I’m glad that you enjoyed it – definitely feel the burn afterwards!

    Oooh, that oatmeal apple raisin muffin looks scrumptious – can’t wait to see the recipe! :0)

    Wow, those bok choy leaves are HUGE!! Where did the English muffin go?? Haha ;0)

    I LOVE when I feel sore the next day after a workout. It rarely ever happens to me either so when it hurts to walk, I feel PROUD! haha

    That tofu sandwich sounds SO good. I have yet to try tofu on a sandwich but I really want to, it seems like it’d would be quite the excellent sandwich filler!

    omg that muffin looks AMAZING! I MUST have the recipe!! I have been looking for a healthier treat to bake and I really hope your recipe fits the bill, because the pic is scrumptious haha

    VeggieGirl ~ Your instructor is probably better than mine, it’s the same girl who has taught the same exact routine for the last 3.5 years! I wish we had a new instructor or routine :) Hehe, the bok choy leaves were big but SO yummy! I realized they were hiding the english muffin – oops!
