I can’t believe Thursday is over already! It’s amazing how fast today flew by, isn’t it?

Lunch was delicious today… My dad & I went to Wegman’s for a nice change from our usual spot (Panera)… I have always wanted to try the salad bar there, but have been nervous about piling too much food in it and having a $20 salad (1lb. is $6.99) :) However, I gave it a whirl anyway, it was in a carefree mood! My salad was FABULOUS… I think I died and went to salad bar heaven… It was truly one of the best salads ever & super filling…

This combination included:

  • Baby Spinach
  • Wheatberry Salad
  • Tomatoes
  • Grilled Squash and Zucchini
  • Cucumbers
  • Red Onion
  • Edamame
  • Sprinkling of Feta
  • Grapes
  • Carrots
  • Orange scented tofu (not impressed w/ the flavor – prefer spicy tofu!)

This salad held me over AMAZINGLY… I couldn’t believe that at 4pm, I still was not hungry… However I did munch on half a Clif PB Bar before spinning for fuel:

Spinning was awesome as usual… I think my legs are getting stronger and I feel more confident about the ACS ride (which is a month away now!) after each and every spinning class… I’m hoping to start getting LONG bike rides in at least once a week now from here on out… I got there a little early so I did about 20 minutes of ab work using the “torso” machine & the “crunch” machine…

When I got home, I was starving so I wanted something quick, simple, and filling… I cooked up a bowl of Annie’s Mac n Cheese, topped it with flax (didnt get any today!!!), basil, and black pepper… On the side I had my leftover crab-cake… I apologize for the unappealing picture, I tore the breading off!

Now I’m off to settle into bed, put my feet up, and relax! I think in a little while I might have a snack of some fruit or a popsicle, we’ll see!

    Putting flax on Annie’s mac and cheese is such a good idea. I actually haven’t tried flax (ever!) but I think that would be a good way to ease into it :)

    That salad looks delish! It’s so colorful too. I just love summer, what with all the fresh fruits and veggies available. :-)

    I really like your idea of putting flax in the mac & cheese – I will definitely do that next time! That salad looks great too! I don’t think we have Wegman’s near me though :(

    (slaps forehead) Flax on mac and cheese! brilliant. After seeing those Annie’s single serve packs, I decided I’d snatch some too (a full box of mac and cheese presents some uncomfortable portion control descisions), but I have to say, when I saw how small the portion was I about cried (double cry because it’s not even WW flour, the outrage :) ). Adding flax though would help both the skimpy size and the satiety issues from processed flour. Gracias

    I’m a big fan of salad bars too. But everytime I end up paying 10 bucks as it gets weighed in because my eyes want everything in sight!

    Jenn ~ Yeah it was yummy, almost like breading, kind of haha… I think whole foods has a similar salad bar!

    Lily ~ After eating it, I thought it was a decent potion size, maybe add in some veggies for more volume? Enjoy

    Richelle ~ Yeah, this one cost me $8! But I guess it could have been worse & at least it was yummy haha

    MizFit ~ Oooo wow :) I actually only had it for the first time a couple yrs ago, so I guess I’ll “out” myself too haha… I have yet to try the toasted chia seeds tho!!!!!
