Little Late

July 1, 2008

I’m a little late with my lunch post today, but better late than never! I purposely thought I had uploaded these pictures when I packed my lunch, but apparently not, unless WordPress gobbled them up? :D Highly unlikely, right?!

Anyway, more than half the work week is over… I am working a full day tomorrow, but only working a half day on Thursday, so the rest of the week should be a breeze… I can’t believe the 4th of July is on Friday and the ACS Bike A Thon is next Sunday – crazy how fast time has been going lately!

Lunch was delicious today… I had a craving for hummus so I made a hummus (tribe organic brand) & spinach sandwich on a ww english muffin… I am in desperate need of a veggie/fruit shopping trip, if you can’t tell! On the side I packed some pretzels and an apple… I’m loving the gala apples lately… they have been so juicy & sweet!

I had no idea what to pack for an afternoon snack so on my way out the door I just grabbed the bag of wasabi oriental mix that I had picked up from the produce store several weeks back… I was munching away while I worked this afternoon and little did I know I wound up eating half the bag… the entire bag is 6oz, so I’m guessing I ate about 3oz of the mix… I guess that’s why the experts say you should portion out a serving and not eat directly out of the container :) It was full of spicy yumminess though and I wound up plowing through a 32 oz water bottle in no time! However it did bother my tummy just a bit!

This isn’t the first time I had an incident with wasabi… *cue funny story*… The first time I went out for sushi, I thought that the pile of wasabi on my plate was a piece of avocado that had fallen out of my roll, so I picked it up with the chopsticks and inhaled it… I quickly realized it was wasabi when tears started rolling down my face and my nose was burning!!!!!

Dinner was on my own tonight, so I decided to whip up a bowl of Annie’s Mac ‘n Cheese and topped it with a pouch full of salmon (and topped with crushed red pepper & basil) as I have seen on the blog Every Gym’s Nightmare (except Kelly uses tuna)… This actually helped settle my stomach (coupled with the large amount of water I had drank)!  The flavor was AWESOME… I now know why this combination is such a favorite :)

Then I was off to the gym to do spinning… I hate doing the same workout in a row, but since it’s spinning and it’s all different instructors who have their own routines and really all I am focused on is getting on a bike and training, I feel like it’s ok, given the circumstances! Class was ok… last night’s class was definitely better but it was still a good workout w/ over 400 cals burned…

Now it’s time to pack up my lunch for tomorrow, grab a snack (posted later) and hit the pillows!

    Mmm, hummus!! Love it.

    Haha, gotta be careful with wasabi – that stuff is killer!

    WASABI. Your first experience story is quite funny, but I feel bad for laughing at it because I bet it hurt your mouth and nose. I love the rice cracker wasabi mixes as well but I have a problem with them, as well as, with trail mix of not being able to stop snacking unless it’s portioned out.

    Lol, that wasabi story is hilarious :D

    That snack mix does look good though… as does your mac and cheese, I may have to make that for the kiddos (who firmly believe that the easter bunny delivers the boxes of Annies lol)

    I totally feel you on the wasabi mix. I could easily eat the 6 oz bag- no problem. Your meals today look super delicious (esp the hummus and spin samme- my fave!). Hope you are getting excited for a long weekend!

    Haha I totally know what you mean about plowing through bags of trail mix – I have to make sure I take mine out of the bag and put it in a bag/on my food, or else I know I’ll be going back for more :)

    I LOVE making “tuna casserole” with mac and cheese, tuna, and frozen mixed veggies! Yum!! I actually planned on having that for dinner tonight! :-)
