Return to Blue

This morning, I was really craving the sweetness of strawberries in my oats, but since I didn’t have any on hand, I settled for the last of my blueberry stash… Have no fear, blog readers, I WILL be making a veggie/fruit shopping trip tomorrow, so my colorful breakfasts will soon resume! This bowl, however, was delicious… I really have become hooked on slow-cooking my oats in the microwave (cooking for 3-4 mins on 40-50% power)… it makes a huge texture-difference… I topped the cinnamon oats w/ flax, walnuts, and a splash of almond breeze… and of course blueberries!

As a mid-morning snack, I decided to try a new flavor of Stonyfield yogurt that I haven’t tried yet… PEACH!  I loved how it had little chunks of fruit in it – although I wish there were more ;)   I mixed in the last of my Nature’s Path Peanut Butter granola… I’d eyeball it at about a 1/4 of a cup maybe?

I packed a lunch today, but my dad decided that due to his work schedule, he wanted to do our weekly lunch today instead of tomorrow… So, unfortunately, my lunch post will come tonight with the rest of my daily eats AFTER I get back from KB at 7′ish…

    I’m glad you’re enjoying the slow-cook microwave…I haven’t thought to give that a try yet, but since it means one less dirty pan, I think I just might have to! Thanks for the tip :)

    I am going to try cooking my oats that way tomorrow morning. I am interested to see/taste this difference!

    Definitly try the apricot mango stoneyfield. I had one the other night for the first time, and stirred in a little frozen mango for a dessert…to die for. I used to love the peach but this flavor is even better.
