TGIF!
Sorry for the less than entertaining post regarding yesterday’s eats, but I knew I’d have to do that or I’d spend the next couple of hours blogging! I hate blogging like that because I really like more descriptive posts about why I ate what I did, etc, but oh well, a gal’s gotta do what she’s gotta do!
I woke up feeling much better than yesterday, but still somewhat tired, hopefully tonight I’ll make up for lost sleep, since I remember reading that it takes 48 hours for your body to recover from not sleeping (or in my case, getting only 3 hrs on Wednesday night)… I slept in a little later but was hoping to still get to work at a decent time, so I stopped at Panera Bread en route and picked up a whole grain bagel, which was both doughy & oaty – loved it:
Around 11, I packed a mini lunch to tide myself over until I got home (had errands to do after work), this is an english muffin topped with the last of my cinnamon raisin pb, some raisins, and a few banana chips:
Around 2, I started getting hungry and had a craving for oatmeal, pb, AND pancakes… so I decided to try my hand at making some oatmeal pancakes ~ the only difference was I used a mashed banana (in place of egg), and mixed 2 tsp of PB&Co. Dark Chocolate Dreams (I think my favorite flavor yet) into the batter… They came out nice and delicious… They look burnt here but they are just dark due to the chocolatey goodness from the peanut butter… I also pan-cooked the remainder of the banana and a few strawberries to use as toppings… delish and REALLY filling…
Here’s the recipe:
- 1/2 cup oats
- 2 tsp Dark Chocolate Dreams
- 1/2 cup milk
- 1 mashed banana (in place of egg)
- 1 tbsp cinnamon
- 1 tsp vanilla extract
- 1/4 cup Stonyfield plain yogurt
Mix well then make as you would normal pancakes… I made mine into tiny silver dollar pancakes and they were perfect!
I feel like I’m going to pop, so I hope the full feeling goes away before I hit the gym for 5:30 spinning!
Tonight is my last time spinning before the ACS on Sunday, so I’m going to try to work my hardest!

Ohh LOVE that Panera bagel – you’re right, it is so doughy and good!

I had oat pancakes today too!!! I like the banana idea instead of egg becuase mine tasted a little too ‘eggy’
And I loved the appearance of PB cap’n crunch.

wow, everything looks so good, especially that bagel! I just love panera. I can’t believe the big race is almost here, make sure you don’t overdo it on exercising leading up to it, and remember to have fun : )
