I loved the kettle corn popcorn that I had yesterday so much so I decided to repeat it again and have it as a mid-afternoon snack… I love the sweetness, but most of all, I love how it fills me up (and is a “snacky” food that takes a while to eat) with only 100 calories!
It’s another scorcher out there as I’m sure most of you are experiencing similar weather here on the East coast… I’m not complaining, but I only wish I was able to enjoy it at the beach instead of in a car facing rush hour traffic :/
Dinner tonight was a lazy, but yummy one… After seeing a panini on the Carrots & Cake blog earlier today, I had a craving for one… This was a combination of spinach, mozarella, and roasted red peppers on whole wheat… definitely hit the spot!
Now it’s off to do some sort of workout – I’m contemplating between the elliptical or spinning but I think I’m forming an addiction to spinning so I might do something else tonight

as a fellow spinning addict, it’s hard to get on the elliptical when spinning is much more fun… and it burns mad calories, which is a definite bonus

That panini looks awesome! Do you use a panini press or do you use a grill pan? The markings are perfect! Looks good enough to be in a restaurant! How is the wedding stuff going? I’ve been slacking on my reading/positing while on vacation!
