I started off this morning with a nice orange bowl of oatmeal… yes it’s oatmeal, despite the fact, that it looks like sweet potato casserole (in my distorted eyes)… it sure tasted yummy! This was a 1/2 cup of oats with 1/4 cup of pumpkin mixed in, then microwaved at 50% power for 3 minutes and topped with a tsp of ground flax and 2 tsp of crushed walnuts (with a few sliced almonds in there)… So hearty & inviting!
Mid-morning I had a peach Stonyfield yogurt with some kashi go lean mixed in… I honestly think this is one of my favorite flavors… I love the peach chunks!
Lunch was a nice change because I packed it on whole wheat bread instead of my normal english muffin, so I was cracking up when I just read Healthy Ashley’s comment about how my blog should be called “For the love of oats… and english muffins!!!! One one half, I smeared the last bit of my Tribe organic garlic hummus and topped it with some cucumber slices and black pepper… the other, obvious side, was topped with two lean turkey slices…
My “side” was a nice crisp Fuji Apple – it was super crunchy and delicious!

just had my afternoon snack of stonyfield vanilla, some blueberries and 1/2 cup of my new mighty bites and i think i might be in love. Best. Snack. Ever. thanks again!

Haha, it DOES sort of resemble a sweet potato casserole; but hey, nothing wrong with that!! Just makes it look even more tantalizing :0)
Fuji apples!! Definitely one of my all-time favorite apple varieties. Though right now I’m hooked on Jazz apples…

You’re so right, it looks like sweet potato casserole! Reminds me of Thanksgiving

Hehe, when I first got to your blog and read the title I thought you were saying you cooked you oats with oranges and I was interested to see the results of that one. There are just certain fruits that don’t seem like they would enhance oats. I was happy to see it was actually pumpkin.

i tried pumpkin in my oats a while back and did not enjoy it. maybe i need to try again….
however, i am loving (maybe a little too much) fresh market peaches in my oats. sooo amazing. you’re the one, linds, who got me to put fresh fruit in my oats!!!

I loooove sweet potatoe casserole! Oooo you should make sweet-potato casserole oatmeal! Use Hungry-Girl’s “I Can’t Believe It’s Not Sweet Potato Pie” recipe and then tweak it to work with your oats! NOM NOM NOM

I agree, Stonyfield Farm makes really good yogurt. Sometimes I get a big container of their plain yogurt to have in smoothies and with fresh fruit or granola stirred in.
