French Toast Oats

Good Morning everyone :)   TGIF!  Thanks for your super kind well-wishes last night… Shockingly, I think I had a 24hr 8hr bug, because around 11pm (an hour into sleeping), I woke up starving… so I had a bowl of Mighty Bites… sorry no picture as I was too tired to do anything but eat!

This morning I woke up with a full appetite though… thank goodness because I truly do love to eat and feel off if I miss a meal or snack!  As a result, I decided to try my hand at a brand new oatmeal combination, which I call:  French Toast Oats!

Here’s the ingredients:

  • 1/2 cup old fashioned oats
  • A hearty amount of cinnamon
  • 1 tsp of vanilla extract
  • 1 egg white

Cook on 50% power for 2 minutes…

Then sprinkle with:

  • 1 tbsp ground flax
  • 2 tsp chopped walnuts
  • 1 tsp light granulated brown sugar
  • 1/8 cup low-sugar maple syrup

Pop back in the microwave for 20 seconds until everything starts melting together and sugar begins to slightly caramelize…

And ta-da… the finished product:

This is a great alternative for when you want french toast but don’t feel like pulling out the griddle to make some (my exact reasoning for this combination)… Maybe it’s because I’m partial to oatmeal, but I seriously think this combination might actually taste better than the real thing :)

    Loving the french toast oats. What a fun way to begin your Friday, especially after feeling so crappy last night! Hope marriage prep class went well. I actually really liked taking those classes before we got married. I just loved hearing his input and feelings about a whole slew of questions that we had never talked about in depth.

    Carmelized sugar on oats??? YUM! That looks awesome.

    I just found your blog and I love it! So I see you’re taking marriage prep classes. We had to go to several of those and an “engaged encounter” retreat- it was an interesting experience!

    I’m curious about these Mighty Bites… off too google them…

    Wow Lindz!! Those oats sound soo good!! French toast in a bowl!! And I bet it really is better than the real thing!!! I’ll have to try that!

    when i saw the title for your post, i was instantly thrilled– what a brilliant way to jazz up oatmeal and there have been too many mornings when i’ve wanted french toast but just didn’t feel like making it. thanks for the geat recipe!

    well, i’ve never really been a big french toast fan (i think i’m the only one-honestly!!), but i’m 100% positive that i would like this better than the real thing.

    How inventive! Does it really taste like french toast? I’m intrigued :-)

    I’ve nearly OD’ed on the blueberry oats so I’m going to need to make a switch tomorrow. They are fabulous but I’ve had them too many times in a row. I might try your french toast version…. or I might be my boring self and go for my faves- apple or strawberry.

    (I did freeze some of my blueberries though, so I can have more blueberry oats after the fresh ones are gone).

    Sarah ~ I thought it had similar flavor, just obviously not the same texture :) Great idea about freezing the blueberries, I just bought a bunch so I should do that!
