Tuesday Treat

After my nice gym trip last night, I decided to do a quick check of the fridge to make sure that I didn’t have any items close to going bad… I tend to do this a lot and my mom has to remind me to clean out the fridge for the items I purchased that no one else in my family will eat (for example:  pumpkin, black beans, cottage cheese, lower-fat ice cream treats, pudding, etc)… Ooops, sorry Mom!

Upon my search, I found some rice pudding and pudding cups that are about to expire in September ~ is it weird that I automatically though, “oh wow I won’t even be living here in September!”… kind of bittersweet I suppose!  Anyway, I decided to dig into a Jell-O dark chocolate pudding cup and topped it with a half cup of blueberries (LOTS of excess blueberries to eat before they go bad!) and had a half cup of Kashi Mighty Bites on the side…

Sadly, this picture doesn’t seem to capture, in my opinion, the yumminess of this snack, but I promise you, it was a wonderful Tuesday Treat!

    Hahaha I agree with VeggieGirl–that picture is funny and cute! :D

    And I’m sure it was tasty–it’s CHOCOLATE pudding! How can it not be tasty?? XD

    i have 2 tupperwears half full of black beans in my fridge that are bad that I forgot to eat. it happens to me alot too.

    Pudding + Blueberries = Heaven.

    I love blueberries + anything chocolate – great idea here!

    Just to let you know, you can freeze blueberries :-) I often buy them in teh summer when they are good and cheap, and then freeze some to thaw out and put in my oatmeal during the winter months!

    i think this happens to everyone – it’s so hard to keep track of what needs to be eaten! your snack looks fun and yummy :)

    My mom ALWAYS tells me to eat my foods in the fridge. Apparently no one else in my family is interested in a can of pumpkin, some tofu and sugar-free tapioca pudding. =]

    But I will be taking my huge tub of peanut butter and apple spread to school with me!

    BOOO, in canada, we don’t have dark chocolate yet, we only have chocolate jell-o!!! i need to make a trip to the us, and bring food back. hahah

    In the summer I’m always drowning in fruit that I have to watch closely to make sure it doesn’t go bad…. I buy pounds and pounds of whatever is in season and eat it all too, but the timing is rough. Raspberries and blackberries first, then blueberries and cherries, later in the week for peaches, pineapple, watermelon, etc…. so many calculations, lol!
    But Rae’s comment is right on, thank goodness for the freezer! I don’t have room to store a lot for the winter, but it does help on weeks when I go a bit produce-crazy :-)
