I’m Back!

I’m back from Virginia :)   Did ya’ll miss me?  Well I sure missed you… It was definitely weird not blogging from Sunday night thru yesterday… I had set up my superfood posts using the scheduled post feature on wordpress since I wasn’t sure if I’d be able to post each day and I’m sure glad I did because this week was jam packed… Our conference was intense, non-stop, but a lot of fun and I met a lot of great people also… My meals and snacks were all over the place but I made sure to have peanut butter, whole wheat bread, tons of fruit, and plenty of coffee each day!  I also got a few workouts in at the hotel gym so that felt really good and gave me extra energy :)

Today has been pretty busy so far and I’m glad that I’m getting a lot of stuff done so quickly… I started out with half a Balance bar in yogurt/honey peanut before spinning and then ate the other half after it ended… I really loved the taste of these because it was very peanut-y and also semi-sweet!  It did a really awesome job of fueling me, I should add…

Then I went off to bake these chocolate funfetti brownie cupcakes for a party we have tonight…

And I made some of Carrots and Cake’s oatmeal muffins except I turned them into bars and added chopped walnuts… I can’t wait to try one – they smell so good!  My dad had one & loved it so much he went back for a second :)

Since I was really going through oatmeal-withdrawal, I decided to have oatmeal for lunch!  They had oatmeal in the hotel, but it was already cooked so I decided to chance it and have it the first day and was not impressed so I never had it again… This bowl of oats just might be the most fantastic tasting bowl I’ve had in a long time, but I’m willing to bet it’s just because I haven’t had real oatmeal in over a week :)   I used 1/2 cup of old fashioned oats with flax, walnuts, and half a banana… I also had a spoonful of PB&Co. Mighty Maple Peanut Butter also… totally delicious!

Now it’s off to tackle a whole bunch of wedding/packing stuff… I am dreading it but also excited that the big day is THREE weeks away!!!

    WELCOME BACK!!!! Even though I thoroughly enjoyed your Super-Duper Foods posts, I’m glad that you’re back to regular blogging :-)

    Glad that you had fun at the conference!! And speaking of “fun,” those funfetti brownie cupcakes are too cute!! I’m sure they’ll be a major hit (along with the oatmeal bars that you made) at the party tonight!!

    Mmm, gorgeous bowl of oats, as always!!

    Yayyy! Welcome back Linds! Thanks so much for taking care of us with the pre-scheduled postings, too! That was so much fun :)

    Can’t wait to hear about the Oatmeal Bars, and I’m so glad your conference kicked booty. I’m definitely curious about something though… DID YOU TRAVEL WITHOUT YOUR BELOVED ENGLISH MUFFINS THIS WEEK?!?! Spill the goods, girl! ;) hehehe just playin!

    This question is open to anyone.

    What are your views on the Alli dietary supplement? Does it work? Is it healthy? Is it worth the money?

    … Because diet and exercise alone is not working for me. And even my doctor is puzzled because I eat balanced meals and exercise everyday. Nothing is working, and I do NOT want to resort to any fad diets or any diets for that matter.

    The scheduled posts were great, but like the others, glad to have you back :-)
    I know the exact feeling about wanting a staple after traveling – when I’m at a conference or just on a trip, by the end I want to come back to my own kitchen and a day (or 2!) of just comfy foods. And the oatmeal at hotels and such really *isn’t* at all comparable – tastes to me like warmed-again glop without texture. Hooray for your own goodies!
    Can’t wait to hear the verdict on the muffin/bars. I made a batch of them as muffins a couple weeks ago and theu were literally gone in a few hours!

    eatingbirdfood ~ I was in Lansdowne, VA :)

    KrisT ~ I had a friend who did it and she didn’t really follow the guidelines or modify her lifestyle and quickly lost interest in it… I can’t advocate it b/c I’ve never tried it, but I’ve heard both good things and bad things about it… best of luck!
