I have seen many yummy pictures of you bloggers out there making egg ‘n sausage sammies, so I figured it was my turn to try this appetizing breakfast! It was absolutely delicious and tasted WAY better than the fast food version, which I haven’t had in quite some time!
First, I split a WW English Muffin and popped it in the toaster… While that was occurring, I simultaneously (just put them in side my side) microwaved 1 egg + 1 egg white and a Morningstar “sausage” for 1 minute each… As soon as both were finished, I assembled my breakfast sammie by putting the cooked eggs on one side (sprinkled with flax & hot sauce) and the “sausage” patty on the other… For my side, I had some super fresh sweet strawberries which were so yummy!!!
To consume it, I did combine them in sandwich form as you can see!
I’m hoping this will keep me full for a while, so I’ll be back with a verdict later today
I packed a Balance Bar for mid-morning snacking, since I’m planning on getting a lot of stuff done before lunch…
Oh and before I forget…

The sandwich and whole plate looks great. I’ve never actually microwaved eggs before. Yours look pretty good though – so I might give it a try!
Hehe, cute “Mock McMuffin” – but I’m fixated on those gorgeous, luscious strawberries… yum!!
TGIF!!

I was just thinking this morning that I need new breakfasty recipes, I’ve been in a rut especially since they are also my go-to snacks. This sounds good, and I think it could work with scrambled tofu. Did you eat it still hot?
