What A Day!

Happy Monday ~ What a happy Monday it was!

Let me explain why:

- Went to bed super late
- Then couldn’t sleep
- When I finally fell asleep (3am was the last time I saw the clock), I overslept
- Woke up groggy and tired
- Got to work at 7am (when I wanted to get there at 6:30am)

However, despite ALL of that…

The PHILLIES won GAME 4 of the WORLD SERIES!!!!

And that just makes me incredibly happy and thus offsets all of the above-mentioned bullets :) Enough gloating – I know our Fightin’ Phils have one more game tonight to clinch, but I have no doubt in my mind that they’ll do it… In fact, I’ve already been informed by the hubby that I will need to take off work on Wednesday (or whenever the actual parade occurs) so that we can head to the parade!

And I should add that I received a SECOND blog award from Sarah! This is my second award in two days ;) Super excited – thanks Sarah! I’d love to give this award out to other bloggers, but I think everyone has been recognized already! Way to go blogger friends – you truly are all winners in my book!!

Now onto the goods…

Since I was off to a rough start, I got up at 6 and was out the door by 6:20… impressive, people! My breakfast consisted off a travel cup filled with Pumpkin Spice coffee (w/ a tad of skim milk) and two of these Egg Muffins that I made yesterday afternoon. I got the idea here and modified it a bit. I used 3 egg whites + 3 eggs with 1 cup sauteed spinach, 1/2 diced green pepper, 1/2 cup ground lean turkey meat (browned), 1 string cheese (peeled)… I poured them into muffin tins and ta-da… the finished product… they were really yummy warmed up today and made for an excellent breakfast; however, i must say after eating two, I was starving! This is why I need my carbs in the AM!

I tried to hold off as long as possible, but around 9am, I had a packet of Quaker’s Low Sugar Maple & Brown Sugar, cooked with water, in the office microwave. Mmmmm, I have a serious addiction to oats :)

Lunch was earlier than normal, around 11:30am, because I had a work meeting. I always dread work lunches because of the options; however this time we had a “sandwich bar” of sorts so I used two slices of ww bread and topped it with spicy mustard, lettuce, tomato, turkey breast, and a slice of american cheese… On the side I had a pickle, and four tortellini’s (from a salad), to be exact haha. It was pretty filling & hearty and much better than the anticipated pizza I thought we would have!

Lunch held me over well and around 2:45, I munched away on a Gala apple. I had the other half of my Pumpkin Pie Spice Clif bar (LOVE ‘EM!) around 4pm to fuel me for the gym. Picture is above :) I consolidated…

I was debating what to do – spin or run? I really couldn’t decide but then decided that running is where it’s at. It’s less time consuming (having to wait for a bike, wait for class to start, 1hr+ time for class and stretching); whereas, running I can go to the gym for 30 minutes, knock out my routine on the treadmill, get some upper body weights in, AND still be home earlier than I would have if I was spinning. So, that’s what I went with.

I rounded out day 3, week 4 with a fabulous run – the 5 minute runs have been NOTHING but challenging, but I feel so accomplished when I finish. I ran for a total of 2.47 miles, burning 239 calories :) I must note though that when I run on the treadmill, I have to run at an incline of 1.0 (at least) – if not, my knees start to bother me. Anyone else have this problem? I know it’s probably my form – does anyone have any good websites/books that they could refer me to regarding proper running form? Before my run I did some quick strength training:

  • 3 sets of 8 pull-ups
  • 3 sets of 10 shoulder presses
  • 3 sets of 20 push-ups

Dinner was pretty simple, considering I prepped most of it yesterday. I cooked a boat-load of brown rice yesterday ahead of time, so that way it wouldn’t be time consuming tonight! I love little tricks like that that made my weeknight dinners speedier. I created a stir-fry of sorts using a mixture of diced peppers & onions. And then threw some chopped up chicken breasts into the mix. I splashed on some lite soy sauce, black pepper, and crushed garlic and served it all on top of my little bed of brown rice. Yum! Chinese food with a healthy twist :)

I might have a snack during the game, not sure yet though so I’ll post one if I do…

OK – i did (updated)… some reason I was craving 1/4 c oats + 1/4 c cranberries + 1 tsp flax + pb… it tasted SO good!

Now it is GAME-TIME: Tampa Bay, you may have the cowbells, but we’ve got the liberty bell :) Let’s go Phillies!!!

I know we’re going to win because the last time the Phillies won was in 8-0, the year my parents got married… So my family’s theory is since we got married on 0-8, they will pull through tonight! Can you tell Philly fans are not just “phanatic”, but also a tad superstitious :) I WANT A PARADE (and yes I will be taking the day off from work to go)!

    Yay Phillies!!! I used to ive in Philly, and they were MY team when they blew the World Series to Toronto (thanks, Mitch Williams). I am watching right now, hoping they can pl it out this time!

    I WISH I WAS STILL IN PHILLY RIGHT NOW!!! :( have you tried the pear apple streusal clif bars??? my my i am in love with that seasonal flava :)

    i’m with you about the treadmill – i always put it on 1 incline, it feels much more natural that way. i have no idea about running forms or anything like that though!

    i’ve tried making egg muffins before and they kind of exploded on me – overspilled all over the pan! it’s time for another try i think!

    hey lindsay,
    i found your website looking for new oatmeal recipes, ha. however, in regards to form, while this is not a quick fix– i used to have pretty bad form– however when im regularly doing yoga it helps. especially Birkram– i think it helps get the body in order. if you’re looking for long term, running and form changes, i swear bikrams the way to go!

    Love your blog and I thought I’d share some info on treadmills for ya! Although it might be your form, it’s more likely that the treadmill is to blame. I’ve read a bunch of stuff that says when treadmills are at 0.0 incline they are actually sloping a bit downhill, which is really bad for runners’ shins/knees. It’s actually best for runners to have at least some incline to combat this. Hope this helps!

    it might not be your form at all – as someone else pointed out. Treadmills are notoriously worse on your knees than normal road running. Anyway, I think you need at least a 2.0 incline to mimick the real slope of running outside.

    Egg muffins look yummy! perhaps along with my oats…

    hmmm i will definitely take your advice for my next run and use a 2.0 incline for my runs… thanks!

    Linds! I’ve been so behind on blog reading! I am so excited you are back to posting more of your meals! You always gave me such fabulous ideas…protein oats for example, etc.

    AND WHOA WHOA WHOA….I had NO IDEA that clif bar made a pumpkin pie spice flavor! i need to get my hands on one of those!!! I haven’t see it around though?!

    HAVE A WONDERFUL rest of your day!!! Your dinner looks amazing too!
