Lotsa Variety

Whew – what a day.  Can’t believe it’s over, but happy because it’s one day closer to the weekend!  I woke up chilly today so I made a yummy and delicious bowl of oats, 2 egg whites, cinnamon, 1/4 c fiber one, 2 tbsp almonds, 1 tsp flax, and 2 tbsp. pom seeds.

Breakfast held me over for hours and hours :)   I’m thinking it was the yummy mix of textures and extra addition of protein.  Mid-morning I munched on some almonds to hold me over until lunch.

Lunch was leftovers that I had stuck in the freezer last week so I decided to defrost them to have for lunch today.  This was Morningstar crumbles, black beans, mixed vegetables, cumin, and garlic.  Alongside I had some whole wheat Goldfish (been so long since I had these!), and a really crisp and sweet Gala apple.

Mid-afternoon prior to heading to my spinning class, I decided to sample a new flavored Clif bar:  Pear Apple Streusel.  The flavor was AMAZING ~ it reminded me of something I used to have years ago but I really can’t put my finger on it.  I tasted bits of dried fruit and the bar was sweet and chewy.

Dinner was one of Bill’s favorites:  Sloppy Joes.  However I was on a mission to make them healthier so I used lean ground turkey meat!  I semi-used this recipe, except I omitted the onion, mushrooms (yuck), and tomatoes – simply because I didn’t have them in “stock”.

I served the mixture on an whole wheat Arnold’s sandwich thin alongside a baked sweet potato and corn.

Dinner was delicious and Bill really enjoyed it – he thought the Arnold’s sandwich thins were perfect for putting the sloppy joe mixture on too.  Now we’re both stuffed and off to get ready for Heroes tonight!

    I’m so glad the pear apple clif bar is good! I am going to look for it! What a great flavor!

    Lunch looks fab (i <3 the whole wheat goldfish) as does dinner! I hate mushrooms too-yuck!

    Gosh I haven’t had a Clif Bar in ages…that makes me want some NOW. And your breakfast looks soo yum. I need to get to the grocery YESTERDAY@ ;-)

    i’m so jealous of your lunch, snack and dinner!!!!! i totally wanted sloppy joes tonight, chili at lunch and after seeing that bar on miss benders latest post, i wanted that!!! i think you read my stomach’s mind today!

    Your eats look great! I’m glad you reviewed the Pear Clif Bar – I’ve seen it in stores, but wasn’t so sure if I would like it … I’m convinced now that I will! :)

    I have GOT to find those sandwich thins!! They are all over everyone’s blogs and I’m so jealous! I want to try them so bad!!!

    That Clif bar sounds so good!! Need to find one. I really need to get a pomegranate…I love them, just so messy, it always looks like a murder scene after going through one of those things haha.

    Mmm, baked sweet potato is SO good. Sloppy joes look yummy too.

    thanks for the review on clif bar–i look forward to hearing about the other flavors as well.

    Also-i am lookng into buying barney butter, but cannot decide whether to get smooth or crunchy. your review helped.

    I’m going to have to see if I can find the sandwich thins around here. I’ve looked but haven’t seen them yet. They look like they would be the perfect size for sammies, just enough bread.

    Oh that clif bar sounds good!

    Now I HAVE to find those bars – especially since you said the pear apple one was PHENOMENAL! That mornign star crumble combo looks fantastic as well! :)

    I’ve now see multiple posts with these Arnold Sandwich thins…but haven’t been able to find them here. I will have to keep looking!
