Ahhh what a day… Today we had our home inspection on our “future” house… Since the inspection wasn’t scheduled to start until 8:30, I had a really relaxed and leisurely morning… I decided to sleep “in” until around 6:30 which was SO nice and then relaxed while having coffee & eating a wonderful breakfast. I also caught part of Britney on GMA which was also interesting. I’ve never been a fan of hers, but I’m kind of glad for her and her family that she has returned to some sense of normalcy, compared to where she was at before!
So now, about that wonderful breakfast… well, I’m happy to say that I finally found Chobani in a grocery store, no the Chobani fairy did NOT visit me, I bought it
I tried a strawberry one today and added in a bunch of mix-ins:
It was delicious! I LOVED the creaminess of the yogurt – especially because it was completely different texture than I was expecting! Now I can completely understand why everyone loves greek yogurt! I need to get some coupons so I can keep buying this – it’s not cheap so I’m sure it will be a rare treat unless it’s on sale
Mid-way through eating this, I decided I wanted some more crunch, so I poured in some Fiber One
Then it was off to the home inspection. It was a long morning and we didn’t wrap up until 1pm! That is a LOOOONG time, but our inspector was really thorough and also gave me a tutorial on how a heater works – neat! I was planning on heading to work in the afternoon, but was tired and decided just to take the rest of the day off. Now the fun negotiations start… Honestly, I don’t know why I’m complaining because it’s been smooth thus far, but I just can’t wait for our house to be sold and everything done and negotiated so that we can just move in and end the process. I get really stressed out with stuff like this and my mom said it best today when she said that I love to be in control and she thinks this is stressing me out because I don’t have control of it – so true! Plus it didn’t help that I locked my keys in the car in front of the seller’s house!! I started panicking and devising a plan where my dad could drive me home to get the spare set until the inspector said oh don’t you know the key code on your car door? Uhhh yes I do – duh! Luckily, that was a crisis easily averted!
When I got home, I finally sat down to have lunch around 2. My appetite was not all there and the though of what I originally packed for lunch didn’t seem appetizing so I resorted to my favorite comfort food: oatmeal. I really went to town on making this a filling and appealing bowl of oats as you can see. I added a ton of toppings:

I loved the combo of cranberry sauce + peanut butter by the way. It sounds totally weird but it really reminded me of pb&j… perhaps I have a new pb sandwich combination on the horizon. However it couldn’t be something that I could pack for a work lunch – I think it would get too soggy
I was about to head out to the gym but I didn’t feel like driving 15 minutes to get there and 15 minutes to get back, so I pulled out my exercise video collection (that I have accumulated over the years but NEVER use) and decided to try Turbo Jam Cardio Party. It was a nice workout that I could do at home, but still get my heart pumping! Once you get over the cheesiness, it really isn’t bad and there are a lot of intense moves, too. I will definitely remember to use it during “snow” days! On that note, like so many of you, I thought I’d show you my new Asics that I picked up at Kohl’s on Black Friday for a great price – they are so comfy & cushiony, compared to my old sneakers!
After my workout, I wasn’t hungry but I was munchy so I snuck a few spoonfuls of granola - I believe it was three, but who is counting? No worries, no one else eats this granola except for me!
Dinner was Jamaican-style… Jamaican Jerk Chicken, Plaintains, Cornbread, and String Beans Almondine! In case you are wondering how I created this meal, I brushed chicken breasts with Jerk Sauce (directly from our Jamaican honeymoon) and then baked them for 35 minutes at 350 degrees. The plaintains were sliced up and dusted with salt, pepper, old bay seasoning, and olive oil and then baked at 350 degrees for 20 minutes or until golden. The string beans was one of those “Steamer” packages, which I really loved. I bought them on sale and will stock up when they are on sale again! The cornbread was leftover from Sunday night’s dinner and I’m happy to say it tasted even better this time around!
Now Bill and I are off to review our home inspection packet and do some fun paperwork! Hopefully we’ll be done in time for Biggest Loser

Glad your inspection is done! That stuff is such a pain! Love the sneaks! Chalene can be really cheer-y but she can work you hard too
Chobani is really good – I like it best out of all the Greek yogurts I’ve had. My favorite is blueberry.

I was wondering if you use green or yellow or black plantains. I tried cooking them once before and they were incredibly bitter… are they all like that?

I just tried the Peach Chobani a couple days ago. SO GOOD! I had to buy it when I was out of town for Thanksgiving though, I rarely find any around me.
Let’s pray for Chobani fairy visits!! Maybe she’ll like the ring of Chobani Christmas Fairy? haha.

Wow he was thorough! Our current house, I was not pleased with the inspectors at all. Nothing major just things they should have pointed out and didn’t. Grrr! I also hate the house buying process, I love going to look at houses but hate all the paperwork! LOL
Something about the word inspection always scares me!

I’m glad you liked the strawberry Chobani — I am actually trying that flavor later today myself. I hope the Chobani fairy visits you, it was the only way I could try it because I cannot find it anywhere in my area, not even our Whole Foods!
nice shoes! the chobani fairy hasnt found me yet either! oh and I am currently on a plaintain kick. You have to try the plantain chips from Trader Joes. Guarantee you eat the whole bag in one sitting. well maybe not, but they are so good!
The versatility of oats is such a good thing… so many delicious toppings to choose from!
