Never-ending Friday

Today was literally the never ending day at work… I didn’t wind up leaving until 3, which made for a rushed drive to get my mom and head to get our nails done… Oh well, at least it went by fast & it’s over now…

Getting my nails done with my mom was fun :) After we were done, I headed home and threw in some laundry. I was at a loss for what to have for dinner, so I decided on making grilled cheese, soup, and salad for Bill. I skipped out on the grilled cheese because all we had left in our house was white bread! I chose to have french onion soup alongside a giant salad, which was filled with mixed greens, red pepper, cucumbers, and cannelini beans.

It was a comforting, yet laidback sort of dinner ~ perfect for a Friday night in.

Now it’s off to relax and literally veg-out. I am mentally exhausted from this week and it’s only going to get worse since I have to leave for a business trip on Monday!

Question for you all… I made a lot of cannelini beans, moreso than I need. Can you freeze them?

    hmm, not sure about freezing beans, but i’m sure if they came out mushy, you could put them in cake or brownies (yes, i’ve seen recipes out there!) lovely lookin salad :) ahve a great weekend!

    Yea, you can definitely freeze beans. Just add a little liquid to the freezeable container so it’ll defroze nicely.

    In my opinion you can freeze anything :)

    I agree w/ Meghann, you can freeze anything (except macaroni).
