Garlic White Bean Hummus

I decided to venture out and finally try making “hummus” using white beans instead of the traditional chickpea variety… and I must say I am quite pleased with the results!
- 2 cups cooked northern white beans
- 1 T garlic powder
- 1 T minced garlic
- sprinkle of salt
- 1 tsp ground black pepper
- 1/2 tsp crushed red pepper flakes
- 1 T EVOO
I put the above ingredients all into my Vita-Mix (substitute food processor here) and blended away on variable speed at a level 5, then rose the level up as it started combining. I had to keep pushing the beans down using the attachment because they seemed to gather on the side. I think I blended this maybe for a good solid 2 minutes or so until it was the consistency of a nice paste. I planned on using it as a spread for sandwiches, but I think it would be a great dip for parties too!

HOLY YUM HUMMUS!!
YUM! I don’t like tahini much and don’t have it on hand, so I love that this recipe doesn’t contain it!
