Balanced?
Before I being ~ I just wanted to apologize for being distant lately… I am by no means stopping the blog but I’ve been struggling trying to find the balance between doing house stuff, working longer hours, working out, getting homework & class stuff done, and preparing to go away for a business trip next week (oh and relaxing?), but bear with me, I’m sure I’ll get in the swing of things again!
I’m sure glad that I got my veggies in at lunch today because my dinner tonight consisted of a few bowls of cereal while on a conference call…
I’m not sharing a picture of my cereal because it’s boring, but I am going to share my colorful AND delicious lunch with you!

And they got mixed into this delicious bowl of spinach, carrots, and cherry tomatoes… with a string cheese for extra protein

I found that by using salsa, I didn’t need a dressing. I think I’m going to start using this method more often… lower in calories AND way more nutrient dense than dressing (except for EVOO)!
I was full after I finished my salad so I saved my goldfish for a little later and had them to tide me over until dinner..

Ok lovelies, well I’m off to relax for a little bit since I’m finally off the phone/computer for the night, but…


No worries, girly! Life always goes before blogging in my book. I am the same way this week – and my posts have been lackluster. Finals, grrr. But life always wins out!

YES! I recently converted to salsa as dressing and am LOVING it. Hooray for no high cal dressing. I’m with everyone else- post when you can….we’ll always be here excited to read

I agree it is so hard to balance everything. Although blogging is fun, it is SO time consuming. Take the breaks when you need to and know we will continue reading whenever you come back
How weird.. I just made a huge salad with beans and covered it all in salsa!! It’s my new obsession!
I hear ya. I’m trying to balance my life as well. Right now, I need to get my paper done…by midnight!
No need to skip the EVOO! I make a salsa vinaigrette with a combo of EVOO, salsa and lime juice or vinegar! Or I run some salsa through the food processor with Greek yogurt for a healthy creamy salsa dressing.

I mix salsa with fat free ranch for a veggie dip – love it!
Great idea- if you like hummus, i use that as a dressing, and avocado..mmm!

I know what you mean about trying to find that balance! It gets hard sometimes when things are hectic, but it’s nice just to have the blog to turn to as a way to sort out your thoughts and take a step back.
I love the salad! The salsa and beans are are a great idea for a healthy alternative to dressing.

I hear ya on the balance thing and just want to echo Erin – posting less has been amazing. It really helps me feel motivated to blog when I am actually motivated to blog, if that makes sense
